Organizational Control in Practice at Cora’s

Jones, George, Rock & Haddad (2010) list Cora’s as one of the “Winning Case Examples” (pg 401) for Organizational Control in the recent recession. They attribute the franchisee’s successful growth as due to discerning location approval by Cora Tsouflidou and and appealing model for franchise owners.
Cora’s is celebrating their 25th year since inception. Currently, “the Cora restaurant chain has 53 restaurants in Quebec; 42 in Ontario; 6 in New Brunswick; 6 in Nova-Scotia; 1 in Prince-Edward Island; 2 in Newfoundland; 2 in Manitoba and 8 in Alberta”. (Cora, 2011, News, The Cora Sun Is Now Shining In Kirkland, para.6)
Cora is described as being very involved with her franchisee’s, making frequent visits to ensure that they are on par with her expectations of quality. Customer feedback is integral. She is still involved in the recipe development process and approves them before they make it out to the restaurants. (Cora ,2011, Our Founder) Beginning with her establishment of a strong brand in Quebec, The Cora Franchise Group was developed in 2011 to aid Cora in her campaign across Canada. (Cora, 2011, Franchising)
Cora’s Mission Statement is as follows:
“Cora restaurants are committed to promoting the importance of eating breakfast, and to creating unforgettable food experiences for customers, by providing high-quality products and service in a warm, family atmosphere.”
Cora (2011) Our Mission, Para. 1
By focusing on the qualities of healthy, generously portioned, reasonably priced food and excellent customer service, Cora Tsouflidou has built a recession-proof business model. Through monitoring her franchisees and menu items she ensures quality remains consistent nationwide. Cora has implemented her plan (Mission Statement) using a franchise strategy and utilizes observational control methods to ensure quality. Franchisees are rewarded for their efforts when happy customers return again and again and they see profits rise.
